Quick Strawberry Balsamic Jam

 

While I love the process, we don’t always have time to do the traditional jam making and canning process, and you can’t rush it. 

     But if you want a small batch of jam, made quickly for fresh use, all you need is a few ingredients and about 20 minutes of your time!  Experiment! You could add a little orange or lemon zest, a few other berries, or even some minced ginger!

2 cups fresh strawberries, hulled, mashed

1/3 cup sugar

Generous squeeze of a lemon

Pinch of salt

1 generous tbsp. lavender balsamic

 

Mash up the strawberries to whatever texture you desire, chunky or very fine. I like mine a little chunky. Mix everything together in a small saucepan over medium-high heat and bring to a boil. Don’t forget to taste it! You might need a little more balsamic, or a little less, depending on the variety you use.

Let cook, stirring frequently, for about 10 to 12 minutes, or until it is noticeably thicker. It will talk to you and tell you when it is ready.

Let it cool to room temperature. When cooled, place in a jar in the refrigerator and enjoy.

THINKING AHEAD: Don’t even have time to do this? We understand! Just chop up your strawberries, place them in a zip lock freezer bag, and some winter night when you are snowbound, you can pull them out and make some “fresh” quick strawberry balsamic jam.
